When I have fresh strawberries on hand sitting on the counter waiting to be used, I often turn to Strawberry Muffins.This recipe for muffins is very easy to make. The muffins came out extremely moist ,light ,fluffy and delicious.
Ingredients:-
2 1/2 cups All purpose flour
1/2 cup granulated sugar
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup buttermilk
2/3 cup oil
1 egg
1 1/2 cup chopped fresh strawberries
1 tsp Vanilla Extract
Method:-
Heat oven to 375º and spray muffin cups with cooking spray or butter it or line with paper liners.
In a large bowl, mix the flour, sugar, baking powder and salt. In another smaller bowl, mix the milk, oil,vanilla extract and lightly beaten egg.
Add wet mixture to dry mixture, stirring just enough to mix it together. Do not over mix or the muffins will become tough. Gently fold in the chopped strawberries and mix to ensure they are well coated with flour.
Do not over stir, or the texture of your muffins will suffer. The batter will be lumpy and slightly floury. This is just fine.
Divide mixture and fill muffin cups coated with cooking spray or lined with paper liners two-thirds full.
Bake at 375º for 17 - 20 minutes (mine took the whole 20 minutes) or until a toothpick inserted in the middle comes out clean.
Cool in the pan for 5 minutes and then remove from pan to a wire rack till they are completely cool.
Makes 36 Mini muffins or 12 regular size muffins
